Exotic ingredients and a deft hand create extraordinary food..
The Scene:
Alan Zeman's latest endeavor showcases the New Southwestern style he was instrumental in developing; Fuego! has an eclectic menu of exotic combinations, most of them involving regional ingredients and often spicy. On the appetizer menu one option mingles scampi, chorizo, pepper, and roasted garlic flambé, and the rest of any meal will proceed apace through a variety of meats and pastas. Zeman manages to make each postmodern plate seem entirely natural, and he's not stingy, either, offering steak-sized portions of ostrich and emu. Given the diversity of the food you may encounter in a single sitting, it's a good thing that Fuego! offers a substantial menu of wines by the glass, plus a wide variety of microbrews. Noisy and bright, Fuego! can stay open late by local standards, despite the official 10pm closing time.
